Turos Pogacsa/Cottage Cheese Biscuits


Ingredients:


1 lb butter (cut in chunks for easier blending)

1 lb cottage cheese

4 cups flour (start with 3 1/3 cups and add as necessary to keep the dough workable)

2 tsp salt

2 tsp baking powder

1-2 egg yolks for wash needed only just before baking



Mix butter, cottage cheese, flour, salt, baking powder in a bowl, or place in bowl of your heavy duty mixer with dough hook and knead until smooth and dough forms sort of a ball. Mix until well blended if doing by hand and knead until smooth. Form dough into a ball. Cut in half to make it easier to work with. Move onto a floured surface. Roll out to 1/2 inch thick, dusting slightly with flour if necessary to prevent sticking.

Fold the bottom third to the center, top third down to the center, left third to center, and right third to center. This gives you more layers. Put in fridge for 15-20 minutes. Repeat folding/chilling two more times.

To freeze: Place pogacsas on floured platter or tray that fits into your freezer. When frozen, place in plastic bags and freeze until needed.

To bake: Preheat oven to 410. Don't use convection setting, it tends to dry them out. When oven is preheated, remove pogacsas from freezer and place on greased cookie sheet. Brush tops with beaten egg and bake at 410 (place rack in upper third of oven) for 10 minutes (or until puffed up); lower heat to 375 (open oven door momentarily to reduce heat) and bake for 4 more minutes golden brown on top, (don't let bottoms burn). Serve immediately and they will disappear immediately! Optional: As soon as you take them out of the oven, put them close together quickly on a platter and sprinklewith finely shredded parmesan (or any kind) cheese. The cheese melts and adds another great flavor!
