It is good to have ground pork in the mixture, otherwise the filling can get a bit hard. Gently stir in the rice. Season the inside of the peppers with a bit of salt and pepper Fill each pepper with the meat loaf mixture, but don't pack tightly. Place peppers in a pot and cover with tomato juice. Simmer gently until meat is cooked through, about 30 min. |
